Recently, microgreens have revolutionized the way people eat their greens. This tiny version of vegetables and herbs typically have more nutrition, stay fresher longer and definitely taste better!

What exactly are microgreens? The microgreen is a stage between the sprout and baby green stages of the plant’s growth. Microgreens are generally grown in soil, as opposed to germinating in water, as sprouts do. Since microgreens are harvested 7 – 14 days after planting, they have plenty of time to absorb nutrients from the light (photosynthesis) and soil, which causes them to have more phytonutrients (such as carotenoids and Vitamin E), and also provide an excellent source of vitamins A, vitamin C (ascorbic acid), and E, as well as iron.

Not only are microgreens extremely nutrient-dense, but they come in a wide variety of flavors, including — spicy/peppery, sweet, nutty, mild and earthy, herb-like and more. They have long been used as a garnish by upscale restaurants, but now they are popular to add to sandwiches, salads, added to soup before eating, stir-fry, in omelets, on pizza, smoothies, tacos…the list is endless!!
