How Do I Keep My Microgreens Fresh?
You have your microgreens and want them to last as long as possible, but how is that done? Since they are somewhat fragile, that can sometimes be tricky. Let them get too warm and they go limp and spoil, let them get too cold and they freeze and turn to mush!
It’s important to keep them cool. We place our microgreens into the refrigerator immediately after they are harvested and packaged. We transport them in a cooler bag to assure that they remain cool. For best results you want to maintain the temperature of your fridge between 35-40° F. I have found that keeping them in an airtight container in a crisper drawer will keep them fresher longer.
It’s also important to not let them have too much moisture in the container (which will also cause them to go bad sooner). If you see condensation in the container, I recommend placing a folded paper towel in the container to absorb excess moisture. If the opposite happens and they seem to be drying out, a moist paper towel can be added.
So how long do they last? I have personally found that the smaller microgreens (radish, broccoli and the spicy salad mix) can last about 10-14 days. The larger, hardier shoots (peas and sunflower) can last even longer. I’ve used some that were 2 and a half weeks old and were still good!
The key is to keep an eye on them and adjust their storage as needed (or eat them up quickly and you won’t have to worry about it!).
