Why Microgreens?
As a mom of 5, I have always tried to feed my family the healthiest food possible. A couple years ago I read an article about how nutritious microgreens were. Up to 40 times more nutritious than their full grown vegetable form! Say what???
One question I had was “what are microgreens exactly”? They are tiny, small versions of vegetables, herbs and other plants that are harvested anywhere from 7-14 days after germination, when their first pair of true leaves emerge, and are typically about one to two inches tall. In the past, microgreens have been used in fine dining restaurants as delicately placed garnishes or for a pop of unique flavor. Lately, studies have been done that are revealing just how amazing these little nutrient-packed greens are!
Scientific studies are confirming that, depending on the species, microgreens can contain increased levels of:
Iron
Magnesium
Vitamin C
Zinc
Copper
Polyphenols
Antioxidants
Vitamin A
Calcium
Folate
Fiber
B Vitamins
Folate
And more!
A nutrient-dense diet has long been known to support a healthy lifestyle and protect you from chronic conditions including Heart Disease, Cancer, Diabetes, and Alzheimer’s Disease. With health benefits like that, why wouldn’t you eat them?! After learning all of that, I knew I wanted to incorporate them into our diet. I also wanted to educate and share them with others!
Along with all of the health benefits, they are just downright tasty! They are juicy and crunchy, and come in a wide variety of flavorful tastes, including spicy, sweet, peppery, nutty - and many more! We have had fun adding them to salads, sandwiches, wraps, smoothies, pizzas…the possibilities are endless!
